Pumpkin Parmesan Gnocchi

I love fall for one reason, pumpkin spiced foods!  I can’t get enough of them and recently was excited to find pumpkin gnocchi in a local store.  The pumpkin gnocchi added a tasty twist to an ordinary gnocchi dish.

Pumpkin Parmesan Gnocchi:

1 package (500g) Siena Arte Homemade Style Pumpkin Gnocchi
1 half package vegan pepperoni
1/2 cup vegan Parmesan
1 small onion diced
2 Tablespoons vegan butter

Pan fry butter and diced onions until caramelized
Add half package chopped pepperoni
Boil gnocchi per instructions
Put gnocchi in sieve, dry and add to pan
Continue to fry until crispy (15 minutes over medium heat, continue to stir)
Add Parmesan


Note:  I found Siena Arte in my local TJ Maxx.  It’s an Italian company and can hopefully be found online.
